Due to remarkable growth, we are now seeking an experienced Senior Chef de Partie to join an elite restaurant in the heart of London. The Senior Chef de Partie is a key member of the brigade who is responsible for the day to day running and management of the section they are working on. Senior Chef de Partie responsibilities:
- Maintain consistent quality and quantity control in all aspects, from portion control to freshness of the product presented.
- Ensure that all dishes are correctly cooked, prepared and garnished to the correct portion and size andpresented as required.
- Produce all necessary food for all food service operations as required / instructed by the Sous chef or Head Chef.
- Ordering of food for his/her section of the kitchen.
- Ensure that all stocks are kept under optimum conditions.
- Ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
- To maintain the quality and quantity control in all aspects, from portion control to freshness of the product presented.
- Understand and comply with food hygiene regulations.
- Attend training courses and seminars as and when required.
- Follow Health and Safety Policies and Procedures in every aspect
- Mentor, guide and train junior chefs.
Senior Chef de Partie requirements:
- Basic understanding of food costs and GP’s.
- Ensure that a high customer service focus ismaintained.
- COSSH trained.
- To be motivated, by being proactive and seizing opportunities to learn new skills.
- Maintain a high team focus, by showing co-operation, dedication and support to customers and colleagues.
